Some
of the olive groves have an ancient structure with
wide format, thickened afterwards, some plants are
up to 800 years old; other have modern structure because
they are more recent. The main “cultivar”
is the mythical “Tonda Iblea", an ancient
variety with twofold attitude and self-steril, called
"Cetrale"; it produces the most valuable
and perfumed oil. There are also other cultivar as
the "Moresca", the " Nocellara messinese"
called "Verdese" and modern plants of "Carolea";
these varieties act mostly as pollinators. The farm
has followed the so-called “biological farming"
for ten years therefore pesticides, fertilizers and
anything potentially injurious to the nature and the
man are put aside. All the olive grove can be watered
by special devices located near the trees. The water
is drawn from the farm well. The olive grove is manured
plughing in compost or dung. The average height of
the olive grove is about 350 meters above sea level,
nights are cool and windy even in summer. At this
height the Dacus oleae attacks are rare and tolerable.
The sheets of the cadastral maps are 38-39-76-55 in
the cadastre of Chiaramonte Gulfi with all the relative
olive grove parcels enrolled in the roll of the olive
groves of the Chamber of Commerce of Ragusa. The entire
farm is in the sub-zone "Gulfi" of the DOP
"Monti Iblei".
